The term "lecithin" refers to a complex mixture of phospholipids and triglycerides obtained by washing with water vegetable oil. The most common phospholipid in the mixture are phosphatidylcholine and phosphatidylethanolamine, although inositol phospholipids, serine and phosphatidic acid are also important.
